Pork roast with apple mustard glaze! Amazing flavor!

Got about a 4lb pork roast.  Seasoned with salt and pepper.  Seared in dutch oven on egg.  Added onion, green pepper, carrot, and garlic.  Cooked around 2 hours until about 160°.  Glaze was apple juice, spicy brown mustard, soy sauce, brown sugar, worcheshire sauce, salt, pepper, and red pepper flake.  Cooked roast for about one hour without touching it at 375°.  Next hour I hit the roast with the glaze mix every 15 minutes.

Cooked this Sunday for tonight.  No plating pictures :(

After sear and added veggies...

    Bowser! Did you impart any smoke to it as well? What did you do with the drippings that many of us otherwise let fall to the drip pan? Looks amazing!

    @SteveWPBFL I didn't add any smoking wood at all.  Just lump.  I could not really notice any smoke flavor.  If it was, it was very faint.  The drippings were just kept in the pot and added flavor to the veggies.  At the end, about 30min before, I poured about a 3/4 cup white wine to add layer in more flavor.  The flavor was great and rich.  Not fall off the bone, but not tough.  Wasn't going for fall off the bone.

    @Johnmitchell it was a great cook and one I will keep doing.  I really loved the glaze and the flavor dimension it gave the pork along with the veggies and the white wine at the end.  I give this my seal of approval.

    Forgot to mention, I added some rosemary to the pork too along with salt and pepper.

    That looks great!  One of these days I want to try something with pork shoulder besides making pulled pork!

    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    Right, @SmokeyPitt, I do love pulled pork, but a nice shoulder roast makes for a great dinner.

    Okay Matt. That looked freaking great!

    Question though, you didn't add any smoke, so did you think about doing this on your stove top? I personally enjoy cooking things on the stove top as I love making the house smell amazing. Lol. Not to mention, it's much easier.

    @cazzy, thank you!

    Wasn't a thought to use the oven for a few reasons.  Though I didn't add wood for smoke, the lump does induce some smoke too, which is what I was after.  Though, I really didn't taste any noticeable smoke flavor profiles.  Second, what I do like is I don't have to heat the house up with the oven on.  I, like you do what is best and that does not always mean the egg.

    Question my friend. Did you eat the whole thing in one sitting? I'm quite certain that I could have. ;)

    I speak the truth my friend when I say that I can eat. Maybe we can meet someday and throw down together my friend. Would be my honor to put on a eating demonstration for you.

    If you ever find yourself on the MS gulf coast be sure to give me a shout. We will pull into the Half Shell Oyster house and clean them out of grilled oysters. My treat my friend.
