    I made these again last night and figured I would give this string a bump... only change I made was used a combo of 2 parts Gentry's Cakalacki Gold Mustard Sauce and 1 part honey at the finishing sauce... better off using plain mustard... still, such an awesome way to do pork chops...

    Hey! Oldie but a goodie. We did this last night too with pork shoulder steaks but I screwed up the cook.  Started too late to use shoulder steaks but tried to force it anyway. was good, but not great. Should have cooked something else and saved these for when I had time to do it right.

    Another bump.

    I was cruising the pork section of the forum looking for inspiration for tonights bachelor dinner.

    Saw this and headed to H.E.B.

    It's in the brine with a rosemary sprig and whole peppercorns.

    I'll brine for about 3 hours.

    Smoked on cherry at 240 until it hit 125. Removed platesetter, got it rip-roaring hot and let them sear for a few minutes. 

    Terrific stuff, thanks fellow Texan for showing the way, my family loved it.

    Nice! I have a few fancy chops left from our last pig harvest. This is definitely on the list for a few of them.

    Tried this recipe last night. Didn't have honey so I substituted corn syrup.

    Awesome. Absolutely awesome. Going forward, this is my "go to" recipe for thick chops.

    Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
