To Travis or Not to Travis - that is the question... have a giant (untrimmed) packer in my fridge for tomorrow night and debating if this will be the technique...
my new Weber BBQ cookbook says go naked on the grill until temp hits 150'F then into the foil pan and seal with foil in a kind of modified Travis. I've decided I'm not going to hide the brisket in a foil pouch for the last half of the cook... but do I go unpanned to start and into the pan after a nice crusty colour develops all over...
