I need to re do this thread. I have competition coming up at the end of the month and I'm doing brisket. I intended to do a write up last year at the same comp but I got too drunk. I'll try harder this year. I may do a small flat side by side with a choice packer just for fun.Be careful, man! I've got a beverage here.

How could it not be awesome? Seriously. :xKeepin' It Weird in The ATX FBTX

I plan on trying this method for my next brisket. The last one I did was a little dry and after spending all that money and time this looks like it might make things a little easier.
BTW This is why I WELCOME seeing old threads come back from time to time.

Yeah, you right. I'm posting on this thread at least once a week for the rest of my life.

I have done it and like it, although I think the allegro is a tad too spicy and takes away from the flavor of the beef. I still like it and will do it this way again.

Followed the recipe exactly and it was delicious. Must confess I do not have a benchmark to compare it against so do not know if it was tough or not, I would describe it as "firm" We ate it on a baguette with mustard, cole slaw on the side Plan to make a Hash with leftovers tonight and corn on the cob

Just found the allegro for the first time in So Cal, so I'm posting to bump this back up to the top. Now I just need to find a nice packer for less than $5/#...Cheers all-B_BFinally back in the Badger State!

My local Ace has the best selection of chunks I've seen. Hickory, pecan, apple, cherry, mesquite, alder, etc.
Great cook Travis. I'm going to give this one a try. Of course my Shiner will come from a bottle.
