    Working in weeknight beans&rice. This is a riff off creole gumbo with black and pinto beans.  Almost there.

    Cooking in advance. It’s my long weekend parent sitting. Any leftovers will be packaged and frozen for future meals. Tempted to call it off. Spent 2 phone calls telling him not to do a certain thing that would violate HOA regulations, city ordinances, and possibly EPA violations.

    Cauliflower is one of my favorites. Might have to try those little smash patties you did!

    Pretty easy to make… 

    Boil the florets in salted water with the juice of 1/2 lemon (and the squeezed lemon half) for 8 minutes until fork tender.

    Let air dry a couple of minutes in a colander.

    Place on a piece of parchment paper in a baking sheet and smash with the bottom of a glass.

    Season with salt, garlic powder, onion powder, and fresh thyme.

    Top with some olive oil.

    Finish with freshly grated parmesan cheese.

    I baked them in my Gozney Arc XL pizza oven @500F for about 10 minutes.

    That all looks and sounds really good (minus the black lettuce 😬). Where I am, I don’t think I’ve ever seen ground pork or beef with anything mixed into it, but I can imagine the green chiles would be an exceptional addition to tacos.

    Sadly, between the deer that pass thru, and my black thumb, I have to depend on the farmers market.  The only thing I’ve been able to grow successfully is oregano, and I hate fresh oregano.  

    Counting to ten only makes it Premeditated.

    Haha, if you rub your Eggs like me, your thumb will turn green too 😂 We have oregano, rosemary, thyme, sage and mint that come back year after year. imo, oregano is more 'potent' than the rest, a little goes a long way.

    The cheese ends at the deli here are half price.  It’s a mix,don’t know what you are getting.  Works for lots of things though.   Sampling the cheese for tomorrows Mac right now
