Is Insta Cure #2 essential to curing Guanciale?

I have a couple of jowls I want to cure some Guanciale. Is the Insta cure essential?

I don’t use cure in any of my cured meats , 2.5 -3% salt and any “ spice” you may desire, equilibrium cure for a couple weeks then dry … if inclined to use cure do it at the rate of .25% and decrease salt by that same amount
edit cure 1 for cures less than 30 days cure 2 anything over 30 days for those using nitrite/nitrateVisalia, Ca @lkapigian -

Used the recipe from the link below less the cure. I increased the salt by a bit to offset that. In the fridge for the next 7 days.

edit to add: we always use cure 1 for Guanciale but never cure 2.Keepin' It Weird in The ATX FBTX -
