Nice lattice work on that pie. I would say that I would devour that, but not sure I could bring myself to cut into it!

  • Very cool, @Canugghead

Kenji on fish head curry…. “likely began as a poor man’s meal but has since risen in popularity to become one of the most expensive items on Indian restaurant menus. For many, sharing a decadent fish head curry as part of a banana leaf–rice meal with family and friends is still a special treat.”

Where do you purchase the fish heads? That looks like salmon(?).

@Botch Sorry my friend. Go get a jug of bleach and send me the bill  ;)
Edit: Haha, I stopped after listening for just 10 seconds, easy to erase lol

@GrateEggspectations Thanks. Yes it's salmon, got them from T&T Supermarket (founded by a Taiwanese woman in Vancouver, expanded across the conuntry and bought out by Loblaws). Still a poor man's meal, about $1 a head on promo sale. Used to pick them up free from a local sushi place.  Edit: We share it with only one of the kids, the rest can't handle the countless bones!

sous chef'd, not chef'd.  what the doc ordered for cold weather...

fish head curry served over basmati rice and curried ground almond chickpea potato, topped with Aerogarden Thai basil...

How it started. How it's going.

    Looks awesome!

We have a T&T about 15 mins South of us, as you can no doubt see on your map. 😆 While we’ve been many times, a friend who is Chinese sometimes invites my wife for the inside track.

Legit question, but bones aside, are the eyes and teeth not texturally unpleasant?

@GrateEggspectations Legit questions indeed. You have to train your tongue for it, push a small bite around and expel anything that feels solid, including teeth and eyes.

    I'd hit that hard @Canugghead !!

Salmon heads are available for cheap at the Asian supermarkets here, but not so at the Bengali/Bangladeshi markets. I need to have a word with Kenji - he's apparently not aware that fish head is (and has been) often the most sought after bit, as far as Bengalis are concerned, right?

@GrateEggspectations - the eyes are small, but mostly fat, so a tasty morsel. You just kind of suck them out of the fish's face bones.

@caliking Thanks, growing up in CCU I know Bengalis inhale fish, especially hilsa!

@GrateEggspectations To clarify, I don't avoid the whole eye, just the black pit. Btw, pro tip for you, when you buy fresh whole fish or fish heads, make sure the eyes are clear not cloudy.

This is from a cookbook I bought her for Christmas. It’s a collection of recipes from the NYT.  So far everything she’s made out of it has been very tasty.

She does!  We take turns.  She cooks during the week and I cook on the weekends, typically making enough for leftovers at least once during the week.  Friday nights are typically take out.

My wife is the main baker too.  The one thing she loves to make are sticky buns.  I once found a new recipe for sticky buns from Gozney, and made the mistake of mentioning it to her.  She was like - you cannot make those, because if they turn out better than mine, we are getting divorced!

    I just realized I’m turning into @RRP

Goddaamn, JIC! So stealing this.  caliqueen and I were trying to to figure out one pot chix dishes the other day, and this so fits the bill.

"Burn" the garlic, and add the zest of one lime to this. Thank me later 😀
