155 Breast, Only cook at 250 to 275. I think the key is not to have a big chicken. Smaller ones seem to cook much better. These are about 4 pounds whole.Foghorn said:@bubbajack, what temp do you cook to? I'm still not sure about the best temp for chicken because you can go until it is "pulling temperature" and it is very tender - or go to about 155 in the breast and 165 in the thigh...I drink cheap beer so I can afford good bourbon.

Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
There’s a lot of carb loading going on in the Grim household. Gloriously golden carbs.lousubcap said:@Thatgrimguy - Cranking out some great looking bread right there. You feeding an army?

I’ve been selling them! I’ve been trading for a bag of King Arthur bread flour or $10! I am at a loss for the appropriate words to express how impressive that Texas paella is. Pork ribs, beef ribs, sausage, beans and so much more. Definitely adhering to the "get the rice right" then have at it cook.Foghorn said:

I made the meat. A friend made the paella. No beans. Homemade venison bratwurst. Fajita chicken thighs. Competition pork ribs. Beef ribs. Short rib stock.

If I get pics from the folks who took them, I’ll post it as a separate thread. We’ve got 6 briskets and 11 pork shoulders to do for tomorrow for the wedding reception.
