Man, browse local grocer deli departments. Look for something called Better than Cheddar. You can find the recipe online if need be. Might be a southern thing, but it’s damn good. Kick it up a notch by topping it with pepper jelly. Serve with Fritos or crackers

Beer Dip
1 8 oz Cream Cheese
1 8 oz Sour Cream
1/4 bag of thinly shredded cheese
1 packet powdered ranch dressing
1/4 cup of Busch Light Beer
Mix and chill for about 3 hrs

Jalapeño popper dip
2-8oz pkgs of cream cheese
1 cup mayonnaise
1 cup Mexican cheese
1/2 cup Parmesan cheese
1-4oz can chopped green chilies not drained
4oz of your favorite sliced jalapeños
Mix all ingredients together in bowl then put in greased 13x9 dish.
1 cup panko bread crumbs
1/2 cup Parmesan cheese
mix bread crumbs and Parmesan together then sprinkle over top of dish.
375 indirect on the egg or in the oven for 20 minutes. DO NOT OVER COOK or the dish will separate.
I like to add cooked ground sausage and some fresh jalapeños to jazz it up.

This one has been a real crowd pleaser with friends and family…..
BUFFALO CHICKEN DIP- Pack of cream cheese – spread on bottom of baking dish
- Layer of shredded chicken (I often sous vide for this application)
- Cup of Frank’s Red Hot poured over- Cup of blue cheese (or blue cheese dressing) poured over
- 2 cups shredded Monterey jack cheese on top- Bake at 350F for 25 minutes
- Broil for delicious, delicious crusty brown cheeseAlso, this is a real cheater move and not what you were seeking, but I’ll mention in case it’s of use to anyone for other applications…. when in a pinch for time, some French onion soup mix dissolved into sour cream yields a pretty respectable return.Call me uncouth! -

Alton Brown Onion Dip
3 tablespoons olive oil
1 pound onions (diced)
1 teaspoon kosher salt (divided)
1 1/2 cups sour cream
3/4 cup mayonnaise
1/4 teaspoon garlic powder
1/4 teaspoon white pepper (freshly ground)
Place the oil, onions and 1/2 teaspoon salt in a 10-inch saute pan over medium heat.
Cook, stirring occasionally, until the onions are golden brown, about 20 minutes. Remove from the heat and set aside to cool for 15 minutes.
Place the remaining ingredients and the remaining 1/2 teaspoon salt in a medium mixing bowl, add the cooled onions and stir to combine.
Refrigerate for at least 1 hour and stir again before serving.
