Beef ribs!

Found some mustard that I needed to cook, so slathered it on a wagyu rack, and put it on this morning.

Mix of maple, hickory, and cherry pellets thrown in for smoke.

The mustard has been going for about 4hrs at 275F. The protein isn’t quite probing like better just yet, so I’ll give it a wee bit more time.

You guys in Texas- even the mustard comes with horns.  Great eats await!

Oakridge BBQ Black Ops, with a sprinkling of their SPOGOS. Set up the FB 200 to run the cook, and it went smooth as butter. Done before the storm hit this afternoon. Very enjoyable, for  little effort IMO.

Got the protein from The Chopping Block in Webster (on hwy 3), near work. They may be a bit proud of their prices, but not crazy. Went in on a whim, and the ribs were an impulse buy. Everyone's pretty pleased on this side.

Same here. I thought it was some kind of boutique-y cooking gadget store, so never thought to take a look. They had some meat signs out on Saturday that caught my eye, so I decided to check it out.

Not much to look at, but this is the best use of mustard. Ever.

Went with lettuce wraps.   Boston bibb, bed of rice noodles, peanut sauce with mirin, soy, etc.

    It did not suck.

What about the mustard greens? Those look awesome by the way.

There are a few eggheads in the area. There may come a time when we can gather for beers, and let @Photo Egg regale us with his killer "deal of the year" exploits :)

Would that come before or after the “why you should never have less than 600 pounds of lump” lecture?
