Beef ribs!

Found some mustard that I needed to cook, so slathered it on a wagyu rack, and put it on this morning.

Mix of maple, hickory, and cherry pellets thrown in for smoke.
The mustard has been going for about 4hrs at 275F. The protein isn’t quite probing like better just yet, so I’ll give it a wee bit more time.

Not much to look at, but this is the best use of mustard. Ever.Went with lettuce wraps. Boston bibb, bed of rice noodles, peanut sauce with mirin, soy, etc.
It did not suck.

Oakridge BBQ Black Ops, with a sprinkling of their SPOGOS. Set up the FB 200 to run the cook, and it went smooth as butter. Done before the storm hit this afternoon. Very enjoyable, for little effort IMO.Photo Egg said:Beautiful, waiting for final evaluation!
