Tandoori Chicken Masala

I wanted to try and create a tandoori chicken masala, but tastier and a lot hotter than the usual style.
Starting with chicken breasts, cut into chunks. I made a stage 1 marinade with a chilli / paprika (plus some other stuff) I keep made up in a jar, salt and lemon juice.

While that sat for 30 minutes, I made the second marinade with yoghurt and cream blended with lots of garlic and ginger, some ground cumin and some saffron. Added to the chicken mix. It was not really as thick as it could have been, I'll use strained greek yoghurt next time. This sat for an hour. Longer would have been better, but no time. Onto skewers and onto a hot MMX.

The idea isn't to cook the chicken, just to get it some char.

The masala (curry / gravy) was a simple spiced tomato sauce. Dry fry dries chillies and cumin seeds then grind. Fry onion, add chopped ginger, add the chilli / cumin plus some pepper and tumeric. Bring this all together then add lots of chopped garlic, cook for 60 seconds (browned garlic isn't nice) add 2 x tins chopped tomatoes. After a few minutes, I blended this and then returned to the pan to simmer. I made 2 sauces with different heat levels.
Add the part cooked chicken, cover and simmer.

Finally, a spinach curry as a side dish.

On the plate with some chappatis - grilled but shop bought.

@GrateEggspectations thanks, will have to look into that with a more open mind. TBH I perceive cooking Indian curry in instapot as blasphemy, kind of like brisket One exception being precooking potatoes for curry.canuckland
