    Just did a shady parking lot meat deal with @20stone. We swapped a 48lb hog leg (cubed up and in clear plastic container) and a bucket of fat for a sausage project this weekend. We dumped the bucket of fat into another bucket so he could have his bucket back and handed over a large pig femur from one vehicle to another in a Bank of America parking lot. Can you imagine what people driving by must have thought?

    Credit where credit is due.  You nailed that cook across the board.  A challenge to get that thickness of steak to yield the finish you achieved.
