Select briskets here were $5.89 pound here today.Coleman, Texas
Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
"Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"

I have a packet wet aging in the fridge right now for a cook this weekend. I plan to couple it with Friday night Zooming. That didn't end well last time...

so this weeks trip for groceries. korean tacos and burgers on the list. no brisket, or skirt, or flank, or tritip, or ribeyes, or ground burger or ribs. so its flap steak korean tacos and veal burgers. might mix the veal with some moose for the burgers. was in there so long that i noticed they are rationing in the meat section, once an hour a tray of fresh meat comes out from out back and whats on it is what you get while there
fukahwee maineyou can lead a fish to water but you can not make him drink it -
Luckily, I was not there to buy meat in ether location. I was just checking out the brisket bins that usually hold 10-12 prime and the area that usually holds about the same in choice.fishlessman said:so this weeks trip for groceries. korean tacos and burgers on the list. no brisket, or skirt, or flank, or tritip, or ribeyes, or ground burger or ribs. so its flap steak korean tacos and veal burgers. might mix the veal with some moose for the burgers. was in there so long that i noticed they are rationing in the meat section, once an hour a tray of fresh meat comes out from out back and whats on it is what you get while there

For those in the L'ville area, the Costco off the I-265 has prime packer briskets (reported by SWMO) at $4.99/lb. 4-5 in the meat case but of questionable butchered quality.Louisville; Rolling smoke in the neighbourhood. Local meat market used to run their ground sirloin at $19.99 for 5lbs. Got an email yesterday it is now $34.99 for 5lbs. That’s steak prices almost.

I use costco brisket for chili, vegetable beef soup or nachos, not as the main serving course by itself.DoubleEgger said:

The last few I purchased from Costco were not great.
After carving them, and prepping them, you could tell the were not prime, as indicated on the package, and the hard fat content constituted on average, about 20-25% of the packaged weight. After rurther trimming, as an example of the 14.4 pound packer (on my last purchase), still leaving 1/4" fat on the bottom, the cooking weight was 11 lbs 7 oz.
I have 3 briskets in the freezer right now (SRF, Creek Stone) that hopefully gets me through the shortage.
I am curious about other outlets that will do package and shipping, if anyone has any tips for high quality product and service, please share."Knowledge is Good" - Emil Faber

@YukonRon I have a brisket from Heartbrand Beef (Texas-first time trying one of theirs) in the queue for National Brisket Day. I just checked the website and they are out of stock. I got it when they had a free shipping promo running in early April, otherwise they are proud of shipping charges.
Another site I have used is Porter Road, out of brisket stock as well.
So, no help right now...Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -

Actually it is a lot of help, and thank you for sharing. I will try them out at a later date, hopefully after we get our stuff together from this pandemic and survive long enough to do so.
Thank you Frank. I aporeciate it.
Which of these (including SRF and Creek Stone) have you found to be a favorite?

I did just order some beef ribs from SRF. Figured brisket on a stick is a close enough approximation right now. At least this is what I'm planning on telling the wife..."I've made a note never to piss you two off." - Stike

You will not be disappointed. I love their beef ribs, cook them like you do a brisket, and as Frank would say "toothpick for the win".JohnInCarolina said:I did just order some beef ribs from SRF. The last package of those I got from SRF weighed in at 9.9 lbs for the three bones (they advertise around 7 lbs). What a treat as you know. And yes it is every bit brisket on a stick. Always better to beg foregiveness...JohnInCarolina said:I did just order some beef ribs from SRF. Figured brisket on a stick is a close enough approximation right now. Select briskets at local grocer for $2.89/#. Bought a 14, limit 1
-
Went to Kroger which has become Noger around here because they are always out of everything, and was goofing around with the butcher shop dudes.
I asked them if they could obtain a full packer brisket...they told me they could order a prime grade and have it for me in a couple of days.
I thought immediately.....BS.....
Turns out they could; a 15 # for "only" $215.00.
I chose not to buy it.

@YukonRon Gotta admit that the Kroger in Prospect has been solidly stocked (except habaneros) for the past couple of weeks. There may be some limited brand specific items but not too many. They limit whole chix buys to 2/ person but in general no complaints here. (Recognize the low bar I set
).

Love beisket .....but $215.00 for what would likely be trimmed to 11.25#.....kinda too deep for me."Knowledge is Good" - Emil Faber
