For the record- I still have sausage gear. I just don’t have 4 400 pound hogs in the field that need processing. Im more a 5lbs at a time guy now.

Actually, to be fair, in group discussions, Cen-Tex has expressed a lack of interest in future farming/butchering endeavors. It has been hard to recreate the magic of our first foray into group butchering with transgender hosts, a constantly amorous donkey, a 55 gallon bucket of porn, Belgian beer, and full scale fireworks courtesy of an intoxicated teenager...

Yeah- my days of full animal butchery are probably over. I enjoyed it but with so many great local producers around me I can buy exactly what I want, when I want. It’s also way cheaper and easier (not that this has ever been a deciding factor for me-lol). 5-10lbs at a time is plenty for me these days.

It was glorious. Having a 16 pound, better than prime, entire striploin from 44 Farms and homemade bread off the egg was also a part of it. Among the best sandwiches ever.

I would do it again in a second (minus the donkey and I would not do it in July in Texas). I just don't want the year-round garage full of equipment for the odd time we all get together and do dumb stuff.
