OT- Pizza yeast

you guys have convinced me to try 00 flour for my pies, ordered a bag on amazon this morning. Which brings me to the other main ingredient other than water. What kind of yeast are you guys using? I run Fleischmann’s because they have it at Kroger and says pizza on the package, I like it better than bread yeast.

    If you are going to use commercial dry yeast, saf-instant is a great choice.

    It's vac sealed in a block about 5-6" high. When opened, the product looks like standard ADY. It's all I've used for the last several years. I've never seen it in any store around here, except Whole Foods.

    Throwing out another option - using ischia [sourdough] culture is another option.  But if you're looking for commercial yeast, you can't go wrong with saf-instant!

    Buy it in the 1 lb package (like saf-instant).  The individual packages are rarely the right amount and cost is much higher than buying the large package.  Keeps for a loooong time in the freezer.  Just keep a smaller amount handy and freeze the rest.

    You can use it immediately. There's not much mass to yeast so it will get to room temp in just a few seconds, especially if you are already mixing it with the flour or warm water.

    I use this very same yeast in my French Bread at my bakery. Actually we use it everything, but who cares.

    Do you use distilled or filtered water? I've read that trace chlorine or chloramine can affect the yeast too, but I've still just used tap water. I've typically been to lazy to warm up my refrigerator filtered water to room/warm temp.
