you guys have convinced me to try 00 flour for my pies, ordered a bag on amazon this morning. Which brings me to the other main ingredient other than water. What kind of yeast are you guys using? I run Fleischmann’s because they have it at Kroger and says pizza on the package, I like it better than bread yeast.

If you are going to use commercial dry yeast, saf-instant is a great choice.Southeast Florida - LBGE

SAF Instant for me as well.
I hate it when I go to the kitchen for food and all I find are ingredients!

Throwing out another option - using ischia [sourdough] culture is another option. But if you're looking for commercial yeast, you can't go wrong with saf-instant!DFW - 1 LGBE & Happy to Adopt More...

Buy it in the 1 lb package (like saf-instant). The individual packages are rarely the right amount and cost is much higher than buying the large package. Keeps for a loooong time in the freezer. Just keep a smaller amount handy and freeze the rest.Southeast Florida - LBGE

Do you use distilled or filtered water? I've read that trace chlorine or chloramine can affect the yeast too, but I've still just used tap water. I've typically been to lazy to warm up my refrigerator filtered water to room/warm temp.
