Beautiful, love the way you draped the racks over the upper grid. Did you have to rotate the upper and lower racks?
I didn’t rotate, except for turning the top 2 90° so they wouldn’t interfere with the dome thermo. They said top and bottom as they were originally placed.
I lit this, as I do most cooks, in 4 places... 12, 3, 6, and 9... just have to be sure and catch the temp on the way up to dial it in while waiting for the blue smoke.

How long did you cook those babies? I cooked two baby backs on the weekend too and everyone loved them. I think they were a tad bit dry and fell off the bone.
I cooked at 250 for 5 1/2 hours. I suspect too long.

Love ribs, my absolute favorite meal....Haps looks awesome as always.This was my half sized approach to multiple racks. They came out fabulous. I was really impressed doing that many and having them work out.
I can't compete with Hap's though. His look awesome and the plated picture is, as always, a work of art.
