Fresh Scamp Grouper.
Dredged in a Flour/AlbuKirky Red mixture, egg and lastly Panko w/ AlbuKirky Red and fresh minced cilantro. Baked at 400. By the time I got off work I didn't have enough time to egg this. However, this would be easy to egg going raised indirect @400.
Pico de Gallo. Peaches, red onion, tomato, jalapeno, fresh lime juice, cilantro, fresh ground Himalayan salt, fresh ground pepper & orange blossom honey. Avocado added as taco being assembled.
Served with a side of saffron rice.

Did you temp the fish, or just go by how brown the crust looked? The fish with that crust alone sounds tasty.

@caliking Thanks. 400F 10 min per side on an elevated wire rack and a 1 minute broil. Fish fillets were, in some cases, around 2"-3" thick.
