Doing brisket and pulled pork for 1000 people today. Company cafeteria is doing the sides. A friend graciously loaned me his 24x60 SF to help out. 

500 lbs each of brisket and butt getting ready to hit the smoke:

    At 45 minutes per pound that's 45,000 minutes or 750 hours, which is 31 days.  You better get going!

    WOW.  I hope you got some BBQ helpers for the slicing and dicing of that pile.  I think my arm would fall off if I had to cut that much up.  Good luck with it!!!

    Last year we did 800 lbs and ran out because people were piling brisket on their plate, not thinking about their friends and coworkers. 

    So we upped to 1,000 lbs this year and the cafeteria folks are doing portion control.

    As has been said, you've got this but still quite an undertaking.  I'm sure the meat supplier had quite a smile when you left with the order.  
    Enjoy the recovery once this is over.  Hope the weather gods are smiling on you.  
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    36 of 40 briskets fit on my 30x80, the other four were in the warmer of the smaller one. We stuffed 50 of 72 butts on the 3 racks of the small one. The remaining butts went on once some of the others were finished.

    Once they had some color everything was foiled to speed the finish.

    The company provided a 30 gal drum for grease. 

    We didn’t have to serve, the company had managers and above volunteer to serve. This was an employee appreciation picnic.

    Slicing the finished product is nothing, compared to trimming them out of the cryo.
