    Just got home from a drive from Miami. ZZZZZ. Vacation starts tomorrow, err I mean today. Back to Nebraska for a friend's daughter's wedding and some college visits for the kids.

    I've had pork belly out of the freezer since Sunday evening. It's vac sealed and was probably fully thawed by Monday evening. Would any of you hesitate to start a bacon cure on Friday? I feel like i'm fine, but I figured i'd ask.

    Oh god no. It went straight from the freezer to the fridge. Bacon here I come!

    That's a hell of a lot prettier than any pie I've ever made. Mine tend to look like a  pre-schooler's failed Play-Doh experiement.

    @booksw I found one of these @RRP uses....however it was a bit of an effort to run down. not sure they still make them. I like though.
