    I've had pork belly out of the freezer since Sunday evening. It's vac sealed and was probably fully thawed by Monday evening. Would any of you hesitate to start a bacon cure on Friday? I feel like i'm fine, but I figured i'd ask.

    Oh god no. It went straight from the freezer to the fridge. Bacon here I come!

    That's a hell of a lot prettier than any pie I've ever made. Mine tend to look like a  pre-schooler's failed Play-Doh experiement.

    @booksw I found one of these @RRP uses....however it was a bit of an effort to run down. not sure they still make them. I like though.
