Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Great looking paella!
Land animal paella is way easier, since sausage and chicken cooking times are wide ranging. Sea creatures, however, get hammered in a hurry (and should thus be put on VERY late in the game), and it looks like you hit it right.(now only 16 stone)
