First batch of Pig Shots for the Little Steven Memorial Cook is together and resting in the fridge. Learning experience for sure.

Taking a break before doing the next batch. Will post cook and finish pictures tomorrow before I go to the Derby Party.Ubi panis, ibi patria.

Well, finally got home at 2:30 am. Brutal travel day but got to sleep in. Turns out we already own asafoetida. TFJ stocks a mean Indian Spice cabinet. Rogan Josh and Naan are on the menu this weekend.Keepin' It Weird in The ATX FBTX

Me, no source for ratan jot, aka alkanet root, for the red color. Local market out of the one brand that had it in the pre-made paste. If I can get to the cook, need to start tonight, I'm supposing achiote might be a reasonable substitute. The Cen-Tex Smoker said:Well, finally got home at 2:30 am. one more thing- LS added lamb stock instead of water when he made this in Salado. Don’t need to tell you that it made a YUGE difference.#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX. -

I’m still new here so never had the pleasure of meeting Little Steven or interacting with him, but I can tell he was well liked. In keeping with tradition of honoring those who Egged before us I will raise a glass to him while tending the Egg today.Tyler, TX XL BGE 2016, KJ Classic 2019, MES, 18.5 WSM, Akorn Jr, 36"&17" Black Stone, Adj Rig, Woo, Grill Grates, SS Smokeware Cap, KAB, FB 300, Thermapen

I have a feeling she'll just roll her eyes and turn away, pretending nothing's happening. bag of chicken in a suitcase probably isn't too surprising...caliking said:It’s on now.

Well, she took a look at the operation and only said "Oh, you're making chicken satay?". Didn't even ask how long I planned to leave it out there.blind99 said:

Atta boy. that’s plenty and I know Steve would be laughing at us watching all this tomfoolery in his honor. He was much more comfortable doing something for others but its our time to show him a little love in return.SSQUAL612 said:I’m still new here so never had the pleasure of meeting Little Steven or interacting with him, but I can tell he was well liked. Doing double duty tomorrow. Doing some Korean style bbq home-grown pork ribs from one of our pigs for lunch and roganjosh for
dinner.
I have cleared the schedule for day drinking and cooking All. Damn. Day.
Got up early today and busted out all the honey-do’s while TFJ was still asleep. Pool work and yard work are checked off the list. All over but the drinking.Keepin' It Weird in The ATX FBTX -

Yup- the upside down chix-first documented here by LS many years ago! While I may have had a few GWN beers that was the plan throughout for today. This is what is left of my cook. One lonely kielbasa slice out of all those PigShots.

That pan on the left contains Habanero brownies. Only had three of those
Will have to think of what to do next year for 2nd Annual Little Steven Memorial cook. @lousubcap - Who in blazes thought pink was a good color for One Lonely Sailor?? Ubi panis, ibi patria.
