    First batch of Pig Shots for the Little Steven Memorial Cook is together and resting in the fridge. Learning experience for sure. 
    Taking a break before doing the next batch. Will post cook and finish pictures tomorrow before I go to the Derby Party.

  • Well, finally got home at 2:30 am. Brutal travel day but got to sleep in. Turns out we already own asafoetida. TFJ stocks a mean Indian Spice cabinet.  Rogan Josh and Naan are on the menu this weekend.

    Well, finally got home at 2:30 am. Brutal travel day but got to sleep in. Turns out we already own asafoetida. TFJ stocks a mean Indian Spice cabinet.  Rogan Josh and Naan are on the menu this weekend. 
    Me, no source for ratan jot, aka alkanet root, for the red color. Local market out of the one brand that had it in the pre-made paste. If I can get to the cook, need to start tonight, I'm supposing achiote might be a reasonable substitute.

    one more thing- LS added lamb stock instead of water when he made this in Salado. Don’t need to tell you that it made a YUGE difference.

    I’m still new here so never had the pleasure of meeting Little Steven or interacting with him, but I can tell he was well liked.   In keeping with tradition of honoring those who Egged before us I will raise a glass to him while tending the Egg today.

    Well, she took a look at the operation and only said "Oh, you're making chicken satay?". Didn't even ask how long I planned to leave it out there.

    I mean, c'mon... doesn't EVERYBODY use a suitcase sitting in the Houston sun to make proper chicken satay???

    Atta boy. that’s plenty and I know Steve would be laughing at us watching all this tomfoolery in his honor. He was much more comfortable doing something for others but its our time to show him a little love in return.

    Never thought I would appreciate a late post-time for the Derby but gonna help today, rain and all.  Chix is on independent ops-

    Blue was my favorite GWN beer in my youth.  Here's to LS.

    Yup- the upside down chix-first documented here by LS many years ago!  While I may have had a few GWN beers that was the plan throughout for today.  Different cook for Sunday-same LS recognition theme.

    @lousubcab - that right there screams LS!!   I didn’t ever meet him but the two things I remember that he helped me with was the Inverted Chicken and baked/fried chicken.

    This is what is left of my cook. One lonely kielbasa slice out of all those PigShots. 

    That pan on the left contains Habanero brownies. Only had three of those :)  Will have to think of what to do next year for 2nd Annual Little Steven Memorial cook. @lousubcap - Who in blazes thought pink was a good color for One Lonely Sailor??
