OT Cold Smokehouse Build

I had some Very Old Redwood Fencing @ my shop that came from my parents house and the house I was raised in. Mentioned to one of our Project Crew that I was wanting to build a Cold Smoker--He surprised me this weekend when he sent me these pictures, had no idea he was building it...Can't wait to see it finished.....Lot of old memories in a fence

For the most part just A-MAZE-N Pellet Smoker as I am just cold smoking however I will have 2 Other options if I want to Hot Smoke 1) Weber JR just sitting inside or 2) I have an old wood stove on my Patio I will just run a duct in the back or use my Mini Egg and duct it in...

We were rigging an old 1/2ass working single door reach-in blast freezer as a cold smoker. Ran outta spare time and it ended up in the scrap yard in the sky. May visit that again one day. It was appealing because we could have used it around here in Florida. Although it would not suffice as a blast freezer any longer it did hold easily as low as 15°

@NPHuskerFL that sounds awesome !... I'm seriously thinking about putting an outhouse style seat in there and let the smoke come through the seat

A few thought on this:

I am so, so jealous. With our various pork related ventures, I've thought about at least building a temporary smoke house for sausages. Even the dishwasher struggles under the mass of sausage we produce
I love the repurposing of the old fence. That is super cool
With a setup like that, I would be tempted (very tempted) to roll with a live fire. Sticks in a stove through a duct would be my first attempt. Yes, I use an AMazN Smoker for cold smoking, but, to me, pellets leave something to be desired (philosophically, if not in the end product), and I would be loathe to sully a smokehouse so fine with some cheapa$$ industrial would pellet product. Burn a stick, man!

@20stone I have a couple old cast iron stoves in my patio I am probably going to duct 1 into it some day....on another note I have a fully functional SS commercial dishwasher ( the kind you slide food trays in ) sitting in my shop you can have I'd gladly ship it to you , ill send you pictures Monday if you'd like to see it ...Gratis mind you

Put a 5000 btu window unit in it so you can cold smoke

Any external fire with a duct into the smokehouse will lower the temp and the ducting will clean up the smoke...I like the wood oven idea.

So, you've seen my garage.

The dishwasher I was referencing before is actually a Karubeque stick burber smoker, which can also be rigged with an AMazN Smoker for cold smoking.

As for your dishwasher, though it has been a while, I have used one of those in a professional capacity. Having one in the G'raj Mahal for a pig day would be absolutely devine. Alas, no more room. Thanks for the offer, though. That would kick a$$

Is it an inch too wide to fit thru a fence gate? I did that once.

I didn't see a ridge cap in your photos - are you not putting one on?

@alaskanassasin, not really I am going to put a Weber Jr in there and run the temp up and get it to speed up the Off Gassing, I don't think it will be an issue after that I will be keeping it under 100 and "hoping" that seasoning with cut down on the porosity of the material---I will be keeping the door Open for quite a while

Looks good. My only concern with this build is the use of OSB. It has a lot of glue in it and other chemicals.
