First time doing Sopes. Masa boats with citrus achiote marinaded half-cocked chicken and the pulled pork from my post yesterday. homemade refried black beans, pickled onions, avocado, crema, and queso Fresca. Everything made from scratch. They were awesome. We are tired now.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Wow. Never knew a simple little Mexican Street dish would cause such a stir. They are not difficult to do and you can pile them with anything you have lying around. I think we all get tired of seeing the same stuff so when something new pops up it looks exotic. These are simple. Try them. I’ll see if I can get janell to post the sope recipe. It causes a stir for a few good reasons. First it looks delicious. Second, the "all from scratch" deserves kudos. Third (this is my opinion), the simplest peasant or street vendor type dishes generate a visceral response from folks. It is comfort food at it's best. And did I say it looks delicious? I still want one... The recipe would be great. I've been online already looking at recipes.
The "from scratch" certainly added some effort to it. When you add in the time it took to go to the farmers market for all the meat it was a labor of love. soaked the beans overnight and slow cooked them all day then refried them. Pickled the onions, she even made the crema! The cheese was store bought but that's the only thing we didn't make.

The sope is a thick corn “tortilla” if you will. They are traditionally fried so they can hold up to the stuff you pile on top. The ingredients I used are very traditional.
