There's no actionable information in my post about the quality of Costco brisket, so nothing to believe in, no action items listed.  FWIW
    You sound like Hillary.
I think you need to go to bed.

    b,
Do you think you're gonna get back on the Brokeback Bull?

No question.  I don't cook a lot of briskets, but I very much enjoy the ritual.  A little sipping, all day fire management - To me, that's happiness.
That trim job alone, is a helluva ritual to endure.
Then the scale and trash pics.  Love it btw, I've got the perfect rub for that brisket.  Meat Church Landfill.

And finally, the walk of shame to Costco CS.

One great use for brisket is ground into hamburger.  @LIT made some killer looking SRF burgers a while back.
If it is worth doing, it is worth overdoing.

Some Eggs, some Weber stuff, the occasional Traeger, and various other things that make flames and hold coals.

Amen brother. I have never personally ground one up myself, but I have had burgers made by friends that used wagyu Brisket. As far as burgers go, one would be hard pressed to do any better. They are phenomenal.
