I did some long overdue male adulting last night

SWMBO is with her brother's this week, so I had a couple of the boys over for some seared bovine slices.

Sous vide @ 129F for :90.  LBGE @ 550-600F.  Also SV'd the corn with plain butter @185F for :30 the night prior, then tossed them into the bath with the steaks @ 129F for :30 to warm up.  Maitre de butter was S&P, thyme and some garlic that had been sautee'd in bacon drippings... and of course I included the drippings in the butter!  And then it was all tied together with some grape juice.

    Did my first sous vide BGE combo the other night with a 16oz ribeye and it turned out a whole lot better than I thought it would.

    I gotta admit, I felt very regal when I got up the next morning.  Just kept grinning about how well it turned out.

    Silver Oak is the finest wine I have ever had.

    129F seemed about perfect for the thickness and cut.  The cool thing about this time - I wanted to go more than an hour sous vide, so I planned on :90.  The second friend was about :20 to :25 minutes late - so they went closer to 2 hours and I was never worried about 'em.  And that hot of a fire on the LBGE put a nice crust on, and warmed up to perfect.
