Dude. Seriously. Those look badass. Wow. Last shorties I did were glazed in soy sauce, pineapple juice and BBQ sauce. They were out of this world. I need to do those again soon. I've been doing the whole chuck/plate ribs lately but the shorties are so good (and easier to find). Great cook!Keepin' It Weird in The ATX FBTX

Honestly I don't know. They were 170 at 2.5 hours. These were on a little over 5 hours and the mini crept up to 285 or so. Best part is the mini is still half full of lump. Damn, I have a brisket on right now, a Turkey and a Ham ready to go in the next couple of days (I'm on vacation) and these just jumped to the top of the list, going to be at the butcher when they open tomorrow.I raise my kids, cook and golf. Thanks Cen-Tex. They were good but your glaze sounds good. I reduced some white balsamic and dropped a few pads of butter in along with salt and pep and drizzled over them when I plated. Perfect timing and nice looking cook. I'm picking up approx 4# of beef short ribs on Fri. So, did you have a target internal temp? Thanks. They were in the 190's. Don't know exactly. Used toothpick test and they had very little resistance but did gave a touch of resistance. They were on 5 hours.
