Chubbs
Posts: 6,929
I am calling the mini up to bat today. Going with beef short ribs. Planning around 5 hours. Nice little test for the mini. Here is a pic of the victims and more to come. Columbia, SC --- LBGE 2011 -- MINI BGE 2013

I love beef ribs, my problem has been the fatty collagen between the bone and meat, I can't seem to render it enough... Any tips?
-
How long are you cooking them?Phatchris said:I love beef ribs, my problem has been the fatty collagen between the bone and meat, I can't seem to render it enough... Any tips?Columbia, SC --- LBGE 2011 -- MINI BGE 2013 -

These sure look good. I just decided to make a garlic butter basting sauce with shallots that I will baste over it and serve remaining with it. Why the hell not.Columbia, SC --- LBGE 2011 -- MINI BGE 2013

@hapster yesterday, now you.... I did short ribs on the egg for the first time a few weeks ago and they were out of this world good. After seeing your post, SWMBO is now asking me for some!____________________Entrepreneurs are simply those who understand that there is little difference between obstacle and opportunity and are able to turn both to their advantage. •Niccolo Machiavelli

Can't go wrong with any cut of beef ribs-and those look like a winner. I judge the finish-line with the tooth-pick test. Somewhere in the 5 -6 hr mark running about 250*F on the dome. @Chubbs-given the more compact nature of the mini you may find them finished a little sooner. Regardless, a banquet awaits!Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. 2.5 hours in. Mini still chugging at 250-260. Hit it with thermopen and we are at 165-170. Pic is after basting with a homemade garlic butter. Smells insaneColumbia, SC --- LBGE 2011 -- MINI BGE 2013

Done. These were a 8 out of 10 and really good. Probably needed another 30 mins or so but SWMBO and son were ready to go so I pulled them. Plated with green beans and twice baked potatoes. Will definitely do them again. Columbia, SC --- LBGE 2011 -- MINI BGE 2013 -
