My mom always hosts the family for lunch. I did the turkey on thanksgiving, but she wanted something different.
Bought this 9.5# (before trimming) choice from Costco. Plan to throw it on after church tonight for 2PM meal tomorrow. Will cook around 250, I'm thinking start at 9 giving 16 hrs cook time and 1 hr for rest, transport at the least. I think it will be done sooner and will FTC.

I agree and don't think it will take that long. I read 1-1.5 hr/#. Just trying to balance sleep, Santa and cooking. Want to leave plenty of time for safety net and try not to be wrapping at 4am.

Better to account for a squirrelly cook and have more time FTC then to try to rush it to the finish. Just my opinion and you know what those are worth :-)
