    Great looking first brisket, love the smoke ring. I'm still afraid to try brisket again after a not-so-great one couple of years ago  :\">  So it was just straight low and slow, no foil, till IT 195-200?

  • @Canugghead‌ correct, no foil. I followed advice of cen tex and Gregg and ran closer to 270 (ran around 265 all night) since I don't have a pit controller. I set the maverick up with a +30 -50 spread and slept all night. :D thanks for the kind words. BTW the balance is in the chili ala @EggObsessed‌ in the fridge awaiting tomorrow's supper. The little bowl that fell into my mouth was spectacular.
