First brisket, Christmas dinner. No pressure.

My mom always hosts the family for lunch. I did the turkey on thanksgiving, but she wanted something different.
Bought this 9.5# (before trimming) choice from Costco. Plan to throw it on after church tonight for 2PM meal tomorrow. Will cook around 250, I'm thinking start at 9 giving 16 hrs cook time and 1 hr for rest, transport at the least. I think it will be done sooner and will FTC.
Anybody see a flaw here?

I agree and don't think it will take that long. I read 1-1.5 hr/#. Just trying to balance sleep, Santa and cooking. Want to leave plenty of time for safety net and try not to be wrapping at 4am. -
I have done 10lb at 225 and they have taken 15-17 hrs to finish at 190IT. AT 250 with 9.5 you should be in the 13-15 hr range. Good luckBrandon, MS

If you have a controller then you are golden-but I don't so with your schedule I would get the BGE lit and stabilized at around 250-280*F on the dome for around 2 hours or so, then toss it on at about mid-night. I generally see about an hour/lb at 275*F on the dome so you should finish in plenty of time. You could start earlier and at a lower temp and then adjust in the AM. Many roads will get you there-and FTC is a beautiful thing. Great eats await! FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Ya if your goin ole fashioned without a controller ( not that there is anything wrong with it) you have those possibilities of temp rising which would obviously having you wrap way early or what if the fire goes out. 275 is way easier to hold without a controller. However if your confident in your settings I'd throw it on at 10 pm at 250LBGE& SBGE———————————————•———————– Pennsylvania / poconos

It's all about the "feel" at the finish-line. When you probe the thickest part of the flat and it feels like "buttah" you are there. You can FTC that bad-boy for hours or not!! Not worried yet. I'll watch the temp for the next hour. Luckily, moms only 10 min away so I got some fudge built in. I'll foil when the sun comes up if necessary. Ain't too proud to use the crutch.

Egg cruised all night no prob. Brisket is at 170. I put in on around 1. Went to sleep around 2:30 on the couch. To bed at 3:30. Dog woke me up at 6:30. Kids up 7:30. I slept somewhere between there.
