@lousubcap @TigerTony thanks a lot.@tarheelmatt sorry dude, it was a madhouse and aunts and uncles were looking at me crazy when I broke out the phone for photos. Wife is used to it now, they'd never seen such. I truly snuck that knife pic while no one was looking.@johnkitchens just do it man. Get a decent piece of meat and put what you like on it. My dad is my barometer for food, he's picky as hell. When I was slicing and pieces kept accidentally falling into his mouth, I knew it was a success.thanks again everyone.

@TCT wow, I can only say thank you! There are many better cooks than me on this forum, I'm fairly new to this journey too. Jump on that brisket. You'll love it. Just start with a quality piece of cow and follow some of the seasoned vets here and you'll be golden. Ask questions that you have on the front end. I will say, I followed advice o got when I started my cook and it helped me sleep. I don't have a pit controller so I ran temps closer to 275 and let it chug along a couple of hours before I put the meat on.I got in a hurry last night with my pork and paid the price of being up and down all night.
