@eggcelsior - I've only used a little of the boil, it was very good. I've used some of the other seasonings several times. I'm kinda SOL until crawfish season starts up again. All our crab is getting shipped to MD and re-branded as local. I'm in the most fertile crab parish in crab country and it's damn near impossible to buy fresh crab. Ok, well I haven't checked recently, but the harvest is way down and export becomes more lucrative.
@SGH - very creative on that stuffed butt. Looks and sounds like a winner. You're cooking up a very diverse array of species on any given night!

@nolaegghead I have seen the LA crab locally, branded as "Pontchartrain Blue Crab Co., Slidell, LA" It goes for around $20/lb.The good stuff, which is True Blue certified, goes for around $30-35/lb.

It was a bone in that i deboned and laid out.
As to the water pan. I used the water pan to extend the dwell time in the smoke chamber.
As to the hair. I thought is was time for a change so I'm sporting a fro. Hope you like the hair sister foodie. I worked very hard on it!Location- Just "this side" of Biloxi, Ms.
