Stuffed Pork Shoulder and Lamb

5 pound pork butt stuffed with bacon, sausage, green onion and some left over shrimp and crab meat that I ground for stuffed peppers yesterday.
A couple of lamb racks. The lamb will be cooked raised on the BGE. The butt will be cooked over water in the vertical at 225 degrees.
