OT - because none of this is taking place on a BGE

It is time for our annual event to welcome new colleagues into our fold.  We get the cooks together the night before for a great meal and prep for the overnight brisket cook.  This year, I happened to have a recently-purchased wagyu picanha from Palmaz Vineyards' Brasas beef collection.

Our hosts provide the sides - the best potatoes au gratin I've ever tasted, panzanella with tomatoes from their garden, and homemade fruit sorbet.  It is often the best meal I eat all year, and this year was up to our usual standards.  We started with a cabernet and moved to a pinotage as dinner was served.

After that we got to prepping the briskets.

    An evening and follow-on morning of great friends, eats and the excitement of bringing home the briskets.  That bark looks great.

    We went with this (largely) for the rub.  It is made by a friend of mine who has a day job but his side job is cooking for Trager at competitions where he does pretty well.
