    The whole thing reminds me of Fat Stack Smokers move from Ca to Houston and made it less than a year....being a good cook, BBQ Builder ETC does not translate into being good in business . I am blessed we have made it to our 30th year, sound foundation and never built our "building " to tall so we can survive the peaks and valleys of the business cycle 
    Honestly, I never understood why Valentina's did that.  Why fix what isn't broken.  They had an amazing business and were obviously doing pretty well.

    Show me a company that does not steal from their employees.  How many companies hire based on salary and work their employees 60 hours a week? or 1099 with no benefits.  I heard the lady at the grocery store meat counter griping because they were going to close the display so since she no longer had to man it they were going to take .50c a hour from her check. she was in her 60s. billion dollar grocer. I am just saying.

    I believe the growth of investing in the stock market over the past 70 years (including replacement of pensions with 401k plans) correlates with what we see as corporate greed now.

    we have had lots of gypsy welders over the years, francis bo gay brought a bazooka to work to show everyone.....aimed at the police station at night with a big night scope on it (his dad musta hated him with a name like that). he is dead now but dont know why or where, can only surmise there were alligators and a swamp involved =) worse was a secretary, about 250k. another was steeling everything, drugs, left with handcuffs and still asked if he had his job come monday, thankfully these things dont happen as much anymore but theres a long list when you work with welders.......maybe theres other reasons not to look at the pretty light.......

    The people I’ve hired look more like the sorts you’d find at a traveling circus than a travel agency.  Nobody welds copper like a bearded lady.

    Their storefront doesn't look bbqish in my mind, better suited to a high-end steak house.  Could be they got in arrears on the mortgage/lease and took desperate measures to stay afloat.
    When we go out for Q we don't care about the place being fancy.  If the chairs don't match we know we're in the right place.

    In the South, a cinder block building with a screen door almost guarantees good Q. 

    same here with seafood, if its not a shack on a wharf with seawater splashing up thru the floor boards then you are in the wrong place....

    looks like a lot went sideways around the same time. The food business is almost impossible to sustain. Between insurance, commodity pricing, leasing, and taxes....it is a nightmare.  

    From what I can/have see/seen, most small chains last less than 5 years and 10 if their lucky. If they sustain longer, there is most always capital investors coming in...and at that point in the game..its not yours any longer.
