OT - Texas paella and other things. Catering a rehearsal dinner and wedding.

A colleague and friend asked me if I would do him the honor of catering his daughter’s rehearsal dinner and wedding reception.  There is only 1 answer to that question.  

I said “Let me ask my wife and the other folks who have helped me with big cooks in the past”.  

Fortunately, they said “yes”.

So, we thought about what to cook for a rehearsal dinner for 40. One of my cooking buddies has a 36” paella pan he’s always looking for an excuse to use, so he suggested paella. I thought, “let’s make a Texas BBQ version of that.”  We did a pilot trial on a smaller scale in January after we made homemade venison bratwursts to go into it.  It was great so we proceeded on a larger scale yesterday.  I like how the beef ribs look almost at large as the wood splits being used to cook them. 

I don’t have great pics, or a lot of them. But here are some.  The 11 pork shoulders are cooking today for the wedding reception - in addition to 6 briskets and smoked hatch chili mac&cheese.  Thanks to @YukonRon for the recipe that includes a molasses based brine and peach preserves during the smoke

    To be clear, I am not the paella-maker. But I am in charge of the smoker.

    @lousubcap, with each event like this (we do one annually for work, so we'll do another one in June) I become convinced that I don't want to be in the restaurant business.  I've had a dream that I could work with an already successful restauranteur to have him/her do all the hard work and I could be a managing partner - but even that would be a big time commitment for me and I've already got a thriving and lucrative career that I very much enjoy.  Ultimately, I have come to the conclusion that the only reason to do it would be to start a place that could ultimately lead to franchises around the country and extreme amounts of money in my pocket.  =)

    Absolutely love the pic of the butts being prepped in the light of the truck's headlights!

    When folks see someone enjoy cooking/food at such a level, they always say "you should open your own place!" DO NOT LISTEN TO THEM!! 

    Hope you've had some time time to recover from the shenanigans. Truly outstanding, and generous, gesture.

    @caliking, there was no recovery.  We cleaned up at the site, packed out and went home bed... then got up to fly to Philadelphia for work and I'm currently sitting in the PHL airport to fly home and land at midnight... then I have to be to work at 7 AM for 36 hours...

    Oh, to be young again!  But every time I click on this thread I am impressed with the creativity to bring out the true Texas theme.  Top marks for the creator.  Da-n awesome!
