OT - Texas paella and other things. Catering a rehearsal dinner and wedding.
So, we thought about what to cook for a rehearsal dinner for 40. One of my cooking buddies has a 36” paella pan he’s always looking for an excuse to use, so he suggested paella. I thought, “let’s make a Texas BBQ version of that.” We did a pilot trial on a smaller scale in January after we made homemade venison bratwursts to go into it. It was great so we proceeded on a larger scale yesterday. I like how the beef ribs look almost at large as the wood splits being used to cook them.

To be clear, I am not the paella-maker. But I am in charge of the smoker.

Foghorn said:A colleague and friend asked me if I would do him the honor of catering his daughter’s rehearsal dinner and wedding reception. There is only 1 answer to that question.I said “Let me ask my wife and the other folks who have helped me with big cooks in the past”.Fortunately, they said “yes”.

But here are some. The 11 pork shoulders are cooking today for the wedding reception - in addition to 6 briskets and smoked hatch chili mac&cheese. Thanks to @YukonRon for the recipe that includes a molasses based brine and peach preserves during the smoke

Never a doubt. Awesome across the board. Great teamwork and execution. I would quote Uma but she has already commented on that paella🥘!Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

The team on the smoker and some more picsThe result was very much appreciated. I’m pretty sure that this is the best wedding gift I’ll ever give. There are some things we could have done better. We still need to work on the timing of our smoked hatch chili mac&cheese. The brisket rub was a little too light - overcompensating for the last big cook I did where it was too salty. And pineapplebaconshrimp need to be grilled and not smoked to optimize bacon crispness. But overall, a huge success.

More pics. We didn’t provide everything on the menu. The slaw, salad, cream corn, and extras were provided by Rudy’s BBQ. I especially like the pic of us prepping pork shoulders in the dark.

Just got a review from the bride:
”Everyone loved it. One of the best compliments I got yesterday was from my uncle who loves cooking and food and is incredibly honest. They all did a food tour on Friday in Austin and had lots of barbecue and he said that the brisket at the wedding was better than any they had on the tour!“XXL BGE, Karebecue, Klose BYC, Chargiller Akorn Kamado, Weber Smokey Mountain, Grand Turbo gasser, Weber Smoky Joe, and the wheelbarrow that my grandfather used to cook steaks from his cattle

Time to take a bow and open your own place. Never a doubt about the skill set of the cooks and the quality of the end product. Reaffirmed right there.
What a monumental cook. Merits a place in the top cooks of this forum!Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -
@lousubcap, with each event like this (we do one annually for work, so we'll do another one in June) I become convinced that I don't want to be in the restaurant business. I've had a dream that I could work with an already successful restauranteur to have him/her do all the hard work and I could be a managing partner - but even that would be a big time commitment for me and I've already got a thriving and lucrative career that I very much enjoy. Ultimately, I have come to the conclusion that the only reason to do it would be to start a place that could ultimately lead to franchises around the country and extreme amounts of money in my pocket.

Absolutely love the pic of the butts being prepped in the light of the truck's headlights!
When folks see someone enjoy cooking/food at such a level, they always say "you should open your own place!" DO NOT LISTEN TO THEM!!
Hope you've had some time time to recover from the shenanigans. Truly outstanding, and generous, gesture.#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX. -
@caliking, there was no recovery. We cleaned up at the site, packed out and went home bed... then got up to fly to Philadelphia for work and I'm currently sitting in the PHL airport to fly home and land at midnight... then I have to be to work at 7 AM for 36 hours...
