The Burger

The Cen-Tex Smoker

Smashed double wagyu patties seared on inverted grill grates. Splashed with liquid amino, then dusted with Meat Church Holy Gospel (more on this later) 

butter brioche bun, BGE roasted hatch chiles, bacon, avocado, tomato (sprinkled with Maldon salt) , pickle, Monterrey Jack (for the melty) Franklin espresso sauce. 

That is a damn fine burger.

    Too funny.   I’ve had something similar happen but a much lesser degree (arms-not ears)

    Amazing burger. Liquid aminos?  We have a keg of it. I'll try it on a burger sometime.  Also,  I thought once a rub clumped, it was no longer usable.  I thought you had to throw it in the trash.

    Oh it was all over me. Hair, arms, stuck to my shirt. But the direct impact was right in the ear.

    We have been there for 5 weeks straight. Hottest summer on record. In Texas. First day under 100 in weeks. Brutal.

    For those curious about Liquid Aminos and burgers- it’s similar to woostah sauce or fish sauce but it like it better. It makes this amazing funky salty crust (especially on smash burgers). I use it on lots of stuff but I use it on burgers and carne asada all the time.
