Found a beautiful piece of Halibut, it did not disappoint.  S&P and on hot cast iron until 125 at core, made simple sauce (butter, caper, garlic, lots of lemon juice). Our kitchen is still down for remodel, so this meal was easy (made sauce in microwave, paper plates, plastic forks, lol) & we enjoyed every bite.
