With temps warming up in the Northeast tomorrow - I am going to try my first run at a pork brisket. Planning on following the attached video as a bit of guide. Anyone else ever given one of these a try??

This old thread and the linked video was my guide doing a pork brisket today. I cooked indirect at around 250/275 to 140 degrees IT and then I foiled the meat and planned to cook until 205 IT… except it stalled out at 199 and it wouldn’t budge. Instant thermometer reads were higher. I definitely overcooked it, but it was still tasty and reminded me of ham. I would cool this again as my kids seemed to enjoy it.
