Not sure if/when that would become unsafe, but let’s be honest, it was never good or best by.

Beef such as steak I will keep. Chicken, on the other hand, I'm deathly afraid of. I won't keep it if it's out of date.
By this logic you should be throwing out your eggs

salmonella is so virulent now that it crosses the barrier and can be passed from the hen to its eggs.

And yet the usda states that eggs kept at proper temperatures, eggs are safe for more than 6-8 WEEKS

chicken is no less safe than beef.

People need to understand their food, not fear it.

I agree with OP.  I cook a lot of meat at once for our family and reheat.  Stuff doesn't normally last two weeks, but if it does it's okay.  Lunch meat gets the smell test after a week and easy to tell if ok or not.  Veggies and bread are ok until they get moldy or mushy. I have cut off the mold and used the rest. I hate throwing food away.

Fish is the only thing I don't like to push beyond a week.

Unless it's meat I'm cooking as a plan, I only buy meat that has been marked for quick sell due to expiration date and then it gets used right away or gets put in the freezer.  The other day I bought two 10 lb bags of dark meat chicken for $5.50 each. That was a good find

You can eat what you want. As far as I'm concerned there will be no chicken served at my home that is past the sell-by date, and I have been known to throw it out if it's even close to the date.

I’m just saying you don’t seem to have any logic as to why other than some mystic spookiness

if you were consistent, you’d throw out beef too.

And vegetables. As much, or more, food poisoning is caused by vegetables than beef or chicken.

But you randomly choose chicken to be the boogeyman.  And the fact that you don’t “believe” the same thing about beef or pork or vegetables is proof that it’s just random superstition.

Just strange is all. I don’t understand how people can just be “i have no idea why i am doing this, but i’m gonna keep doing it instead of figuring out what is the real threat”

    you do you.

What is your opinion on a corned beef brisket that has been sitting in my refrigerator since well before St. Patrick’s Day? It’s in cryovac and the sell by date is May. Should I cook it soon or will it be ok to save for next St Paddy’s Day?

I couldn’t blame you for throwing it out as soon as she walked in the door with it 👍

You are probably good either way.  I cooked one a couple of months ago that I smuggled across the border before it closed over a year ago.

I wonder if hot dog buns are embalmed/preserved commensurate the level hot dogs are.... I guess this would be a question for our resident bread expert(s),

White sliced bread, hamburger buns and hotdog buns have shelf life extender enzymes in them. That’s how they get em fresh for up to 21 days. 60 days is a stretch. No mold. Eat. They’re probably dry as hell.

Bagged lettuce smells like decaying garbage to me. I bought some of the "olives on the go" basically serving size portion of olives in a plastic cup. The expiration date is 08/22. Again they smell like a trash can to me I don't know how people eat that crap.

I’m guessing living on a farm tends to change one’s notion of what smells fresh.

It is probably just me @JohnInCarolina for whatever reason the gas they pump into that stuff to preserve it is unappetizing. I can't do shrimp that have been treated with Sodium tripolyphosphate

I get that.  I don’t mind it but I can easily see how some folks would.
