Deep-Fried Potato Skins With Pulled Pork and Cheddar

Trying these today, with a couple of twists:

I smoked a pork butt yesterday so I'm all set with the protein. I will also finish these on the BGE this afternoon instead of in the oven, to add some extra smoke to the whole enterprise. I'm thinking of adding a little bit of Korean BBQ sauce in with the pork too, underneath the cheddar.
I'll be updating throughout the day unless it turns into some colossal failure. And well OK maybe even then, lol.

First fried short ribs, now this? Need to consult my cardiologist before trying this delicious looking cook. Or, maybe consult after!
(my sheet pans also look like hell, but I’m not replacing them, even after the wings did them in yesterday. The racks cleaned up nicely, tho)It's a 302 thing . . .
