    lol ok you got me.  i am busted. theres a beer while the grill warms up, beer(s) during the cook (who needs a watch or thermapen? just count empties) and then bring the food in but run out to drink the “whatever’s left” beer while cleaning the grid and closing the egg.

    Wow, so many amazing cooks ^^^ folks.

    @caliking Everything is right up my alley. Couple of observations:
    1) Your green garnish is usually cut at a sharp angle, not this time so I'm guessing it's extra from the pancake?
    2) You fried the pancake fully submerged in fat?

    I feel like @Paolo and @Canugghead must be related. The pie game is just too strong. 
    Nay, it's the oven, I have the Pizza Party with saputo biscotto, direct import from Italy  =)

    I'm still far behind and trying to get a little closer to @paolo's level though :blush:

    No way, those twelve pies are just too perfect for me  :)
    I’ve heard those biscotti by Saputo are great, I should get one myself.
    btw I’m considering getting a gas pizza hoven. I’m wondering if I’m at risk of destroying the Egg with those frequent races to 800 F

    Sharp eye, @Canugghead ! I didn’t do the “horse ear” cut this time,  because the recipe called for 2 inch pieces of scallion.  But, I then changed my mind, and cut them smaller. 

    I goofed re: frying the pancakes. The initial plan was to fry them like paranthas (oiled skillet),  but I was swayed by a video I watched, and fried them in more oil. The outsides were crunchy and flaky, but the insides were not as much. 

    Any tips would be appreciated 🙏🏾

    I don’t submerge mine, I put in enough oil to go 1/4 - 1/2 way up the pancake, temp depends on how first one looks on outside and inside - usually around 360 or so if I remember correctly, but I adjust after first trial one - I use a small dab of batter to test in the beginning.

    @caliking - I’ve never (intentionally) made sticky rice. Yours appears to have a great consistency. Great presentation.

    Thank you all, my friend is an amazing cook and really expanding my skill set!  Helping me to try a lot of different things and it’s fun to love cooking again!

    @Ozzie_Isaac. That looks and sounds amazing. You say you have dropped 50 lbs 😎
    Haha!  Yup!  Even saw the Dr yesterday and blood pressure is down 30 pts and I’m off all my blood pressure meds, lowest in probably 10 years.  Said it looks like reducing my daily stress has been real good for me.

    used the red sauce for a French omelette this morning.

    I've heard a lot of divorced guys say they lost 130 lbs (or 150, 170, as appropriate) in the divorce. I'm starting to think they didn't mean their own body weight.

    That’s great. I really need to retire before too long.

    I am starting to look at the path. was supposed to start with lowering to 4 days/week this July, then 3 days/week next July and then retire in 2027. That's already been pushed out.

    An observation after screen licking several of the above threads:  These presentations are perfect for stand-alone posts.  Looking to grow the forum, I believe it would attract more forum participants.  So, all you talented cooks and chefs have at it.  An opinion...FWIW-
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
