@Buckwoody Egger it takes me a little bit to toggle the top vent mostly closed and the bottom at 1/3 with not a full fire going in the XL. If I light 3-4 places it is almost impossible for me to keep it under 200° edit: was also a very cool 65° F here today. Mid summer I’m lucky to keep it under 200° regardless of strategy.

I have a pellet smoker I use when it is over 85° here and I want a long slow smoke. Was taking advantage of an unseasonably cool day or this would have been done on the pellet smoker.

I’m just me, don’t mind comparisons (wish I had the metabolism to have more lard in my recipes). @Foghorn I would guess we are probably related 🤣. In the way back my people were lighthouse keepers along the coast and settled for a couple generations in Miami (police and plumbers). Dad went to Gainesville for school so I was raised outside Gainesville and ended up staying there for school and eventually being a professor there before coming to A&M to teach. As you can imagine I’m pretty damn excited about the Gators playing Monday!

If you like to smoke on the Egg, @BeanHead, then I bet you’d have fun with one of these smoker trays, which can be used to cold smoke in pretty much any enclosed box.I believe the original may have been A-Maze-N, which is the one I have, but it looks like they may be out of business.

Oooh! Sold, I hope you get a kickback! I have cold smoked a couple cheeses on a raised rack over an ice bath on the MiniMax, but this looks a lot more reliable. Plus as you can imagine I have an over abundance of pellets in addition to the sacks of lump in the garage.

No affiliation here, but I did think that someone like you could probably leverage a tool like this to a great extent. Please post if you do; I’d love to see it.Also, it can also be used very effectively for hot smoking. -

Smoked a few golden beets yesterday with the pastrami. Used one for a salad yesterday and the others this morning for pickled eggs and pickled beets. I like a splash of absinthe in with the beets because it gives them a bit of a fermentation flavor. Not actually canned so they are more of a refrigerator pickle and will easily be gone in a week.
