Needed something simple and fast at the end of the week…Campbell’s tomato soup and a grilled cheese. Plus a few from earlier in the week:Scallops with roasted okra and green beans
Sweet potato and black bean chili, with cheese, sour cream, and pickled jalapeños

Good on you. In case it could help, I’ll mention that I’ve had great success with one-meal-a-day when the need has arisen. Actually began this past Monday and have already gotten results. As long as you’ve got the willpower, the rest is easy. -

Leftover beef and ingredients from pizza last night are now stuffed mushrooms. Chopped the mushroom stems and sautéed with an onion, garlic and ginger. Added chopped jalapeño, pickled carrot and daikon, green onion, fresh mint, basil and cilantro and stuffed that into the caps that I par baked (added the mushroom liquor from par baking to the mix. Into the toaster oven for a bit and finished with a little bit of MiL havarti to hold it together.

Another Indian-ish take on tarte soleil. Duxelles (with some Indian spices), mixed with paneer, and some shredded mozz to hold it all together.
