Heated up some leftover tamales. I’m done with Thanksgiving leftovers.

Pulled out the KBQ for ribs. Brushed with reserved fat from the egret’s ham, and dusted with Oakridge Dominator. Fired with cherry. Ran it hot 290-300F, ‘coz  I had to get them done quick. The best I’ve done all year.

@caliking - Great ribs right there.  That cherry likely helped with the colour (nod) on that bark.  Sweet.

Thanks, Cap. Cherry really is my fav for pork. The rub candied up the bark just a little, and made for a great bite.

They’re so good.  I like them just a little undercooked so they’re still a little chewy.  I would destroy those.

Pork Carnitas in my slow cooker. 

7 lb. Pork butt rubbed with Cumin, adobo chili, chipotle powder s & p. 

Orange juice
lime juice 
a Jalapeño 
a few tomatillos 
a few onions 
garlic

10 hours 

served on corn tortillas with cojito cheese pico and cilantro

soft eggs are on my list of top 5 foods. You may have already found recipes for marinated eggs for ramen (ajitsuke tamago), but if you haven’t, someone here shared this a good while back. They’re delicious!
