    Thanks @caliking !!   For the eggs it was the most difficult thing I’ve ever cooked but way worth the effort. Get ready.  Scramble eggs, mix in parm and moz cheese,pour into egg molds then add cheddar on top,cover with foil and cook high pressure for 12 mins in the instant pot

    I hope these will last in the fridge for a couple of days. If they reheat well, these may go into the weekday breakfast rotation.

    Not as fancy as above, but I will occasionally cook up some bacon or sausage, whip up some eggs and put some of the mixture with cheese into muffin tins a bake until done. They freeze well for a quick breakfast.

    They will last without issues.  I used to make a batch on Sunday and eat the following week
